Creamy Taco Mac


This is a dish that I can see myself making for my family on a weekly basis, and I'm positive that it will satisfy everyone's taste buds.

This meal is flavorful, hearty, easy, and made all in just one pan. I like that in a dinner. It makes a weeknight very easy, especially since I just got a new puppy. He's a miniature dachshund, and  he's 7 weeks ago. Pictures will come soon, I promise.

Anyway.

This recipe is meant for just two, but it could easy feed an army without breaking the bank. And of course you can use any ground meat and you can add as much cheese and spices as you would like. You can pretty much  jazz this dish however you like, and it really has no choice but to end up delicious and comforting.

Ingredients for 2
  • 1 cup macaroni, cooked and drained, with 1/4 cup of the reserved cooking liquid
  • 1/2 pound ground turkey
  • Olive Oil
  • 1/2 white onion, diced
  • 3 garlic cloves, minced
  • Salt and pepper
  • Chili powder
  • Cayenne
  • Cumin
  • 1 tomato, diced
  • 1/4 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup fresh cilantro leaves
In a large skillet, add some olive oil on medium heat. Add the garlic onions. Cook until fragrant and add the ground turkey. 

Brown the turkey and remove excess grease if desired. Add the diced tomato and season with salt and pepper. Add the heavy cream and season heavily with chili powder and cumin. Be sure to taste for additional seasonings! I find that a lot of the seasoning gets lost in all the cream.

Add cooked pasta. Stir well and allow to simmer for 30 minutes. Add reserved pasta water if the sauce is too clumpy. 

Stir in cheese and serve immediately with cilantro.
